Description
Grand Pré Wines Ltd. in Nova Scotia, Canada, with its associated vineyard and vinification capacity producesand bottles traditional grape and apple-based wines. The company has also developed advanced and proprietarywine products such as Pomme d'Or, a sweet apple wine, which is distributed to retail stores in Nova Scotia andacross Canada. A goal of the company is to further expand its product range and to pursue establishment of ahigh-end alcoholic drink in the form of a cream-based liqueur derived from its unique Pomme d'Or process andusing heritage apple raw stock. In this way, it is intended to establish a differentiated cream liqueur productwhich captures the unique organoleptic essence of the Pomme d'Or process. The development of a cream-basedapple liqueur derived from the Pomme d'Or process involves significant technical challenge to achieveacceptable emulsion properties, appropriate organoleptic quality and ambient temperature shelf-life stability.The company is limited in capacity for research and development of this nature and requires food scienceinputs and laboratory support to overcome technical challenges and attain an acceptable prototype product.Success in this project will permit Grand Pré Wines to add value to the current line of products made by thecompany and consequently generate additional economic benefit as well as provide a product that is unique forNova Scotia and the North American market.
